Happy Heart Macaroni (6.5 PTS)

Serves: 2 people

Recipe Ingredients

1   Olive oil
3   Crushed garlic cloves (or more - to taste)
1 cup 62g / 2.2ozChopped tomato
2   Chopped fresh (or 2 t. Dried) parsley
1   Chopped fresh (or 1 t. Dried) basil
2   Honey
1/4   Salt
1/8   Black pepper
2   Cooked elbow macaroni (about 4 ounces
  Uncooked)
1/2 cup 80g / 2.8ozCanned black beans - rinsed and drained
2 cups 292g / 10ozChopped fresh spinach - WELL CLEANED and
  Drained

Recipe Instructions

Heat oil in a large nonstick skillet over medium heat until hot. Add

garlic;

saute 1 minute. Add tomato, parsley, basil, honey, salt and pepper, and

saute 3

minutes. Add macaroni, beans and spinach and cook 1 minute or until

thoroughly

heated. Feel free to use any other seasonings of your choosing, and if

you'd

like, you can add shredded chicken or beef for a meal with meat. Enjoy!!!
