1/2 | Grape tomatoes - quartered | |
1 | Yellow pepper - chopped (small) | |
3 tablespoons | 45ml | Olive oil |
1 | Garlic - minced | |
2 tablespoons | 30ml | Fresh basil - chopped |
3 tablespoons | 45ml | Grated Parmesan cheese |
Selection and storage: Choose firm, deep red, blemish free tomatoes.
Never store tomatoes in the refrigerator. Avoid direct sunlight.
Preparation: Remove stems, if any. Wash tomatoes and quarter with a
sharp knife.
1. Preheat grill. Lightly toast both sides of bread slices for 2 minutes
per side.
2. Combine tomatoes, pepper, 1 tablespoon oil, garlic and basil.
3. Spoon tomato mixture onto toast and sprinkle with cheese.
