Greek Beef and Orzo (8 PTS)

Recipe Ingredients

1 lb 454g / 16ozGround beef
1   (14 1/2 oz) stewed tomatoes - undrained
1   Celery - sliced (1/2 cup)
1/2 cup 118mlUncooked rosamarina (orzo) pasta
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlGround red pepper (cayenne)
1/2 cup 118mlYoplait® original plain yogurt

Recipe Instructions

Cook beef in 10-inch skillet over medium-high heat about 6 minutes,

stirring

frequently, until brown; drain. Stir in remaining ingredients except

yogurt.

Heat to boiling; reduce heat. Cover and simmer about 12 minutes, stirring

frequently, until liquid is absorbed and pasta is tender. Serve with

yogurt.

Makes 4 servings, about 1 1/4 cups each.
