5 tablespoons | 75ml | Water |
1/4 teaspoon | 1.3ml | Salt |
4 teaspoons | 20ml | Eggs (large) |
4 teaspoons | 20ml | Egg whites (large) |
1 tablespoon | 15ml | Olive oil |
3/4 cup | 109g / 3.8oz | Dry breadcrumbs |
1/2 cup | 73g / 2.6oz | Crumbled feta cheese (2 ounces) |
1/4 cup | 15g / 0.5oz | Thinly sliced green onions |
2 tablespoons | 30ml | Chopped fresh parsley |
1 tablespoon | 15ml | Chopped fresh or |
1 teaspoon | 5ml | Dried oregano |
Preheat broiler.
Combine first 4 ingredients in a bowl; stir well with a whisk. Heat oil in
a 9-inch cast-iron skillet over medium heat. Add breadcrumbs; cook for 1
minute or until lightly browned. Spread egg mixture evenly in pan; top
with cheese. Broil 15 minutes or until omelet is firm. Sprinkle with
onions,
parsley, and oregano. Cut into wedges. (serving size: 1 wedge).
