Feta Omelet With Breadcrumbs (4 PTS)

Recipe Ingredients

5 tablespoons 75mlWater
1/4 teaspoon 1.3mlSalt
4 teaspoons 20mlEggs (large)
4 teaspoons 20mlEgg whites (large)
1 tablespoon 15mlOlive oil
3/4 cup 109g / 3.8ozDry breadcrumbs
1/2 cup 73g / 2.6ozCrumbled feta cheese (2 ounces)
1/4 cup 15g / 0.5ozThinly sliced green onions
2 tablespoons 30mlChopped fresh parsley
1 tablespoon 15mlChopped fresh or
1 teaspoon 5mlDried oregano

Recipe Instructions

Preheat broiler.

Combine first 4 ingredients in a bowl; stir well with a whisk. Heat oil in

a 9-inch cast-iron skillet over medium heat. Add breadcrumbs; cook for 1

minute or until lightly browned. Spread egg mixture evenly in pan; top

with cheese. Broil 15 minutes or until omelet is firm. Sprinkle with

onions,

parsley, and oregano. Cut into wedges. (serving size: 1 wedge).
