1 | Mediterranean curry couscous mix such as near east 5.7 ounces | |
1 | No-salt-added diced tomatoes - undrained | |
4 cups | 948ml | Water |
1/2 cup | 73g / 2.6oz | Diced zucchini |
1 teaspoon | 5ml | Curry powder |
1/4 teaspoon | 1.3ml | Salt |
1/4 cup | 23g / 0.8oz | Almonds - toasted |
1. Combine couscous mix and seasoning packet, tomatoes, and next 4
ingredients in a saucepan; bring to a boil. Reduce heat; simmer 5
minutes. Top with almonds. Serve immediately.
Yield: 4 servings (serving size: 1 1/2 cups soup and 1 tablespoon
