CURRIED BLACK BEANS AND RICE (5 PTS)

Recipe Ingredients

1 tablespoon 15mlOlive oil
1 tablespoon 15mlOnion - minced (medium)
1 tablespoon 15mlCurry powder
1/2 lb 227g / 8ozSmoked turkey sausage - sliced thin
3/4 cup 177mlFat-free chicken broth
2   Black beans - (16 ounce) drained
  And rinsed
1 tablespoon 15mlWine vinegar
3 cups 480g / 16ozCooked rice

Recipe Instructions

Heat oil in large heavy skillet over medium heat. Add onion and curry

powder; cook, stirring frequently, until onion is tender. Stir in

turkey sausage and broth; simmer 5 minutes. Stir in beans; cook until

hot, stirring constantly. Remove from heat; stir in vinegar. Spoon

over rice.

Per serving: 242 calories, 3 grams fat, 10 milligrams cholesterol, 41

grams carbohydrates, 4 grams fiber, 14 grams protein, 278 milligrams

sodium.
