Crockpot Vegetable Barley Soup (4 PTS)

Recipe Ingredients

3/4 cup 46g / 1.6ozChopped onion
1   Pieces green beans
2/3 cup 157mlUncooked barley
2/3 cup 41g / 1.4ozFresh or frozen whole kernel corn
1 1/2 cups 355mlWater
1 teaspoon 5mlSalt
1 teaspoon 5mlChopped fresh thyme
1/4 teaspoon 1.3mlPepper
1 1/2 lbs 681g / 24ozBeef stew meat
1 lb 454g / 16ozBell pepper - chopped (small)
2   Beef broth
2   Diced tomatoes with garlic - undrained
1   Tomato sauce

Recipe Instructions

1. Mix all ingredients in 4 to 5 quart slow cooker.

2. Cover and cook on low heat setting 8 to 9 hours or until vegetables and

barley are tender.
