Creamy Garlic Mashed Potatoes (3 PTS) Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Baking potatoes - peeled, cut in 3/4" cubes |

1 tablespoon | 15ml | Olive oil |
3/4 cup | 177ml | Yogurt |
3/4 teaspoon | 3.8ml | Salt |
1/8 teaspoon | 0.6ml | Black pepper |
In medium saucepan, place potatoes and garlic; cover with cold water.
Partially cover and bring to boil over high heat. Boil until potatoes are
tender when pierced with a fork, about 15 minutes. Drain and return to
the pan.
Add olive oil and yogurt; beat with electric mixer until fluffy. Season
with salt and pepper. Serve hot.
Serving (1/2 cup) provides: 1/3 milk, 1/2 fat, 3/4 bread. Per serving: 127
cal, 3 g fat, 1 g sat, 2 mg chol, 293 mg sod, 66 g car, 1 g fib, 66 mg
calcium.
