Cinnamon-Apple Pie Parfait (4 PTS)

Recipe Ingredients

1 cup 237mlLight apple pie filling
1/4 teaspoon 1.3mlApple pie spice
2 1/2 cups 592mlVanilla low-fat ice cream - softened
6 tablespoons 90mlLow-fat cinnamon crisp graham cracker crumbs about 8 crackers

Recipe Instructions

1. Place apple pie filling in a bowl, and coarsely chop apple slices using

kitchen scissors or a knife. Add pie spice, and stir well. Spoon 3

tablespoons ice cream into each of 4 parfait glasses; top each with 2

tablespoons pie filling mixture and 1 tablespoon crumbs. Spoon 3

tablespoons ice cream over crumbs, and top with 2 tablespoons pie filling

mixture. Sprinkle 1 1/2 teaspoons crumbs over each parfait. Serve

immediately or freeze until ready to serve.

Yield: 4 servings.
