1 tablespoon | 15ml | Baking powder |
2 teaspoons | 10ml | Ground cinnamon |
1 teaspoon | 5ml | Baking soda |
1 1/2 cups | 219g / 7.7oz | Granny Smith apple - peeled and chopped |
1 cup | 237ml | Lowfat buttermilk |
1/3 cup | 78ml | Skim milk |
1/3 cup | 48g / 1.7oz | Lowfat ricotta cheese |
3 tablespoons | 45ml | Vegetable oil |
1 tablespoon | 15ml | Vanilla extract |
2 tablespoons | 30ml | Egg whites (large) |
1 tablespoon | 15ml | Egg (large) |
3 tablespoons | 45ml | Sugar |
2 teaspoons | 10ml | Ground cinnamon |
Preheat oven to 400.
Combine first 5 ingredients in a large bowl. Stir in apple, and make a
well
in the center of the mixture. Combine buttermilk and the next 6
ingredients
in another bowl (buttermilk through eggs); stir well with a whisk. Add to
flour mixture, stirring just until moist. Spoon batter into 18 muffin
cups.
Combine 3 tablespoons sugar and 2 teaspoons ground cinnamon in a small
bowl;
sprinkle evenly over batter. Bake at 400 for 18 minutes or until done.
Remove from pans immediately; cool on a wire rack.
