1/2 cup | 80g / 2.8oz | Firmly packed brown sugar |
3 tablespoons | 45ml | Stick margarine - softened |
1 tablespoon | 15ml | Light-colored corn syrup |
1 teaspoon | 5ml | Vanilla |
2 teaspoons | 10ml | Egg whites (large) |
3/4 cup | 46g / 1.6oz | All-purpose flour |
1/2 teaspoon | 2.5ml | Baking powder |

3/4 cup | 46g / 1.6oz | Quick-cooking oats |
7 oz | 198g | Milk chocolate covered raisins |

1. Preheat oven to 350 oF.
2. Combine brown sugar, margarine, and corn syrup in a bowl; beat at
medium speed of a mixer until light and fluffy (approximately 4 minutes).
Add vanilla and egg whites to bowl; beat until well blended. Add flour,
baking powder, and salt; beat well. Stir in oats and chocolate-covered
raisins. Drop by level tablespoons 2 inches apart onto baking sheets
coated with cooking spray. Bake at 350 oF for 12 minutes or until almost
set. Cool on wire racks.
Yield: 2 1/2 dozen (serving size: 1 cookie).
