Cheese Topped Orange Roughy (4 PTS)

Recipe Ingredients

2 lbs 908g / 32ozOrange roughy
  - or sole/code or snapper
  - TOPPING:
1/3 cup 78mlLight mayonnaise
1/3 cup 48g / 1.7ozParmesan cheese - grated
1/4 cup 15g / 0.5ozGreen onion - sliced
1/2   Lemon juice
1/4 teaspoon 1.3mlGarlic powder - (1/4 to 12)
  Hot sauce to taste

Recipe Instructions

Preheat oven to 350 F. Place fish in a shallow glass casserole coated with

cooking spray; bake 8 minutes or until fish flakes easily when tested with

fork. Meanwhile, mix topping ingredients. Spread topping evenly over

cooked

fish fillets. Broil 6 inches from heat for 5 minutes or until topping is

lightly browned.
