Chicken Adobo In Coconut Milk (Adobong Manok)

Recipe Ingredients

3 lbs 1362g / 48ozChicken cut into pieces
1 1/2 cups 355mlApple cider vinegar
6 tablespoons 90mlGarlic - (finely minced)
1/2 cup 118mlSoy sauce
1 teaspoon 5mlBlack pepper - (freshly ground)
2   Bay leaves
1 tablespoon 15mlPeppercorns
1 tablespoon 15mlBrown sugar - (optional)
12 oz 340gCoconut milk - (1 can)
  Salt or patis to taste

Recipe Instructions

Combine all ingredients in a sauce pan and marinate for two hours. Boil mixture until chicken is tender. Separate sauce from chicken and broil chicken until brown. Reduce the sauce over moderate heat to half and pour over chicken.

Serve Hot with rice.
