Black Bean Gazpacho (3 PTS)

Serves: 4 people

Recipe Ingredients

3   Chopped, peeled and seeded tomatoes and/or 12 oz Hot-style vegetable juice coctail*
1   Chopped seeded cucumber, yellow squash/ Zucchini
1   Fully cooked ham, cubed
15   Black beans or garbanzo beans rinsed and drained
2   Italian salad dressing
  Bottled hot pepper sauce (optional)
  Thinly sliced green onion
1/2   Chopped green or yellow sweet pepper

Recipe Instructions

~In a large mixing bowl combine tomatoes, juice, ham, beans, cucmber or

sqaush chopped pepper, green onion and dressing. Cover and chill for 2

to

24 hours. If desired serve with bottled hot pepper sauce. Makes 4 main

dish servings.

*Note: If you're not so hot about hot and spicy fooc, you can use

regular

vegetable juice cocktail, or even the reduced sodium version,.
