Black Bean Burritos (3.5 PTS) Recipe - Cooking Index

1/2 | Onions - finely chopped | |
1 | Fat-free cheddar cheese - grated and divided | |
1 | Avocado - diced (optional) |
Preheat oven to 350°F. Grease a baking sheet.
For Sauce: Puree tomatoes, onions and green chilies
in a blender. Set aside.
For Burritos: Spread 1/4 cup black beans down the center
of each tortilla. Sprinkle onions and 3/4 cup cheese
over top of beans. Wrap tortillas around the filling.
Place seam side down in prepared baking dish. Spoon
sauce over top. Sprinkle remaining cheese on top.
Bake for 15 minutes, or until cheese is melted. Sprinkle
avocado over tortillas.
