Two Cheese Vegetable Pizza Recipe - Cooking Index
1 tablespoon | 15ml | Mazola corn oil |
2 cups | 292g / 10oz | Chopped mushrooms - (about 8 oz) |
1 cup | 237ml | Red pepper - cut into strips (large) |
1 cup | 62g / 2.2oz | Onion - chopped (small) |
2 | Garlic - minced | |
1/2 cup | 73g / 2.6oz | Low-fat ricotta cheese |
1/2 teaspoon | 2.5ml | Dried basil |
1/4 teaspoon | 1.3ml | Salt |
4 | Thomas' original English muffins - split | |
And toasted | ||
1/2 cup | 73g / 2.6oz | Shredded low-fat mozzarella cheese - (2 oz) |
1. In medium skillet heat corn oil over medium-high heat. Add mushrooms, red pepper, onion and garlic; stirring frequently, cook until tender. Remove from heat.
2. Stir in ricotta cheese, basil and salt. Spread over toasted muffins. Sprinkle with mozzarella cheese.
3. Place muffins on baking sheet. Bake in 375F oven 10 minutes or until cheese melts.
Makes 4 servings.
