Two Cheese Vegetable Pizza

Recipe Ingredients

1 tablespoon 15mlMazola corn oil
2 cups 292g / 10ozChopped mushrooms - (about 8 oz)
1 cup 237mlRed pepper - cut into strips (large)
1 cup 62g / 2.2ozOnion - chopped (small)
2   Garlic - minced
1/2 cup 73g / 2.6ozLow-fat ricotta cheese
1/2 teaspoon 2.5mlDried basil
1/4 teaspoon 1.3mlSalt
4   Thomas' original English muffins - split
  And toasted
1/2 cup 73g / 2.6ozShredded low-fat mozzarella cheese - (2 oz)

Recipe Instructions

1. In medium skillet heat corn oil over medium-high heat. Add mushrooms, red pepper, onion and garlic; stirring frequently, cook until tender. Remove from heat.

2. Stir in ricotta cheese, basil and salt. Spread over toasted muffins. Sprinkle with mozzarella cheese.

3. Place muffins on baking sheet. Bake in 375F oven 10 minutes or until cheese melts.

Makes 4 servings.
