Superfast Vegetarian Pizza

Recipe Ingredients

1 tablespoon 15mlOlive oil
1 tablespoon 15mlZucchini - diced (medium)
1 tablespoon 15mlYellow crookneck squash - dice (medium)
1/2 teaspoon 2.5mlDried crushed red pepper
  - flakes
16 oz 454gBaked chase pizza crust
  - such as Boboli
1   Mushroom pizza sauce
3   Garlic - minced
4 oz 113gMozzarella - shredded
1/2 cup 118mlOil-pk sun-dried toms - drain,
  - thinly sliced
1/3 cup 48g / 1.7ozParmesan cheese - grated

Recipe Instructions

Preheat oven to 450F.

Heat oil. Add zucchini, yellow squash and red pepper; sauce until veggies are almost tender, about 5 minutes. Place pizza crust on baking sheet. Spread mushroom sauce over.

Sprinkle with garlic, then mozzarella. Top with squash mixture and tomatoes. Sprinkle with Parmesan. Bake pizza until cheese melts and crust is crisp, about 13 minutes.
