Superfast Vegetarian Pizza Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
1 tablespoon | 15ml | Zucchini - diced (medium) |
1 tablespoon | 15ml | Yellow crookneck squash - dice (medium) |
1/2 teaspoon | 2.5ml | Dried crushed red pepper |

16 oz | 454g | Baked chase pizza crust |

1 | Mushroom pizza sauce | |
3 | Garlic - minced | |
4 oz | 113g | Mozzarella - shredded |
1/2 cup | 118ml | Oil-pk sun-dried toms - drain, |
- thinly sliced | ||
1/3 cup | 48g / 1.7oz | Parmesan cheese - grated |
Preheat oven to 450F.
Heat oil. Add zucchini, yellow squash and red pepper; sauce until veggies are almost tender, about 5 minutes. Place pizza crust on baking sheet. Spread mushroom sauce over.
Sprinkle with garlic, then mozzarella. Top with squash mixture and tomatoes. Sprinkle with Parmesan. Bake pizza until cheese melts and crust is crisp, about 13 minutes.
