Potato Pizza

Recipe Ingredients

3 cups 711mlPotatoes - cubed
1 cup 62g / 2.2ozWhole wheat flour
1 cup 62g / 2.2ozTomato (large)
1 cup 62g / 2.2ozOnion (small)
1/2 cup 118mlTomato paste
2 teaspoons 10mlOregano
1   Garlic
1 cup 146g / 5.1ozRicotta cheese - nonfat, or
1 cup 146g / 5.1ozWhite cheese - 1/2% fat, dry type
2 tablespoons 30mlParmesan cheese - grated

Recipe Instructions

Scrub potatoes, but do not peel before cutting into cubes. Boil until soft, then mash, and add flour until quite stiff. Spread mashed potato mixture in the bottoms of two lightly Pam sprayed 8 x 8-inch (20 x 20-cm) baking pans, or on the bottom of a lightly sprayed cookie sheet with sides.

Place in a preheated 400F(200 C) oven for 15 minutes while preparing sauce. In blender, combine the tomato, onion, tomato paste, oregano and garlic. Process on low speed until smooth.

After 15 minutes, remove crust from oven. Spread ff ricotta evenly over the crust. Top with the sauce and sprinkle with ff Parmesan.

Return to the oven for 15 or 20 minutes, until done. Serve hot.
