Tomatoes in puree | ||
1 cup | 237ml | Water |
2 tablespoons | 30ml | Fresh parsley - chopped |
2 tablespoons | 30ml | Fresh oregano - chopped or |
2 teaspoons | 10ml | Dried oregano |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
In a non-reactive large saucepan, melt butter with olive oil over medium heat. Stir in garlic and cook one minute over medium heat. Stir in garlic and cook one minute, being careful not to burn. Stir in anchovy until dissolved, one to two minutes.
Add tomato paste and stir to heat. Stir in tomatoes with puree, water, parsley, oregano, salt, and pepper. Bring to a boil, reduce heat to low, and simmer uncovered 30 minutes. Roy North Beach Maryland
