Grated Zucchini-Pesto Pizza Recipe - Cooking Index

2 lbs | 908g / 32oz | Zucchini* |
3/4 cup | 177ml | Pesto |
2 | Garlic cloves - peeled/minced | |
1/2 lb | 227g / 8oz | Mozzarella - shredded |
*washed, trimmed, grated or shredded, and squeezed dry in a dish towel.
1. Preheat oven to 500F for 30 minutes for a pizza pan or 60 minutes for pizza tiles or stones.
2. Combine the zucchini, pesto, garlic, and mozzarella in a large bowl. Spread the mixture over the dough shell.
3. Bake in a preheated 500F oven for 10 to 15 minutes, or until the crust is golden. This pie is delicious hot or cold.
