Cottage Cheese Pizza

Recipe Ingredients

3/4 cup 46g / 1.6ozFlour
1 teaspoon 5mlBaking powder
2 tablespoons 30mlMargarine - low calorie
2 teaspoons 10mlMargarine - low calorie
1/2 cup 99g / 3.5ozEgg substitute - or 2 eggs
2/3 cup 97g / 3.4ozCottage cheese - nonfat or low-fat
1/2 teaspoon 2.5mlOregano
1/2 teaspoon 2.5mlBasil
1/2 cup 118mlTomato sauce
4 oz 113gMozzarella cheese - low-fat
1 tablespoon 15mlParmesan cheese - nonfat

Recipe Instructions

Mix flour, baking powder and margarine with a fork until it resembles crumbs. In a small bowl mix egg substitute and cottage cheese and then stir into previous mix.

Place this mix into a 10" pie plate that has been sprayed with low-fat spray. Mix together the tomato sauce, oregano, and the basil and then spread evenly over the mix in the pie pan leaving a 1/2" border around the edge.

Top with the mozzarella and parmesan cheese. Cook for 20 minuets at 375F.

Cool for 5 minutes before cutting. I have added cooked chicken and some lightly steamed vegetables to the tomato sauce for variations.
