Quick Mustard-Tarragon Sauce Recipe - Cooking Index
1/2 cup | 118ml | Dijon mustard |
1/2 cup | 118ml | Honey |
2 tablespoons | 30ml | Dry tarragon |
1/4 cup | 59ml | Lemon juice |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/3 cup | 78ml | Extra-virgin olive oil |
Place the mustard, honey, tarragon, lemon juice and salt and pepper in a blender. Blend for 30 seconds on high. Turn the blender to low-medium, open the pour-in lid and slowly drizzle in the olive oil to emulsify. When all the oil has been absorbed, use immediately as a finishing sauce for poultry and fish.
This recipe yields sauce for 4 to 6 servings.
