Cranberry-Walnut Relish Recipe - Cooking Index
1/2 cup | 99g / 3.5oz | Granulated sugar |
1/4 cup | 40g / 1.4oz | Loosely-packed dark brown sugar |
1/4 cup | 82g / 2.9oz | Maple syrup |
3/4 cup | 177ml | Water |
1 tablespoon | 15ml | Ground cinnamon |
1 teaspoon | 5ml | Freshly-grated nutmeg |
1 lb | 454g / 16oz | Fresh or frozen cranberries |
4 | Naval oranges - peeled, and | |
Divided into segments | ||
1/2 cup | 73g / 2.6oz | Coarsely-chopped walnut pieces |
Bring the sugars, syrup, water, cinnamon, and nutmeg to a boil. Reduce to a simmer and cook gently 5 minutes. Add the cranberries and continue to simmer, uncovered, until half the berries "pop". Remove from the heat and stir in the orange segments. Cool, stir in the walnut pieces, and serve.
This recipe yields 5 cups of relish.
