1 teaspoon | 5ml | Onion - chopped (small) |

4 | Chicken breast halves - boneless, skinless, | |
1 cup | 146g / 5.1oz | Broccoli flowerets |
1 cup | 237ml | Chicken broth |
2 tablespoons | 30ml | Soy sauce |
2 teaspoons | 10ml | Cornstarch |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Black pepper |
Lightly brown nuts in vegetable oil in large non-stick skillet over medium heat, about 3 minutes. Remove with slotted spoon. Saute onion and garlic in skillet for 2 minutes. Add chicken; saute until golden, about 8 minutes.
Add broccoli, 3/4 cup broth and soy. Simmer, covered, for 5 minutes.
Dissolve cornstarch in remaining broth; stir into skillet. Simmer, stirring, over medium heat until thickened. Boil 1 minute. Return cashews to skillet with salt and pepper.
