Herb And Caper Sauce

Recipe Ingredients

1 cup 237mlMayonnaise
2 tablespoons 30mlLemon juice
1/2 teaspoon 2.5mlLemon zest
1/4 cup 59mlDijon mustard
3 tablespoons 45mlOlive oil
1/4 cup 10g / 0.4ozCoarsely-chopped flat-leaf parsley
1/4 cup 36g / 1.3ozFresh chopped dill
2 tablespoons 30mlTiny capers - coarsely chopped

Recipe Instructions

Combine mayonnaise with lemon juice, zest and mustard in a bowl using a whisk. Slowly drizzle in olive oil to create a simple emulsion. Fold in the herbs and capers with a spatula and chill slightly before serving with poached fish or seafood.
