Herb And Caper Sauce Recipe - Cooking Index
| 1 cup | 237ml | Mayonnaise | 
| 2 tablespoons | 30ml | Lemon juice | 
| 1/2 teaspoon | 2.5ml | Lemon zest | 
| 1/4 cup | 59ml | Dijon mustard | 
| 3 tablespoons | 45ml | Olive oil | 
| 1/4 cup | 10g / 0.4oz | Coarsely-chopped flat-leaf parsley | 
| 1/4 cup | 36g / 1.3oz | Fresh chopped dill | 
| 2 tablespoons | 30ml | Tiny capers - coarsely chopped | 
Combine mayonnaise with lemon juice, zest and mustard in a bowl using a whisk. Slowly drizzle in olive oil to create a simple emulsion. Fold in the herbs and capers with a spatula and chill slightly before serving with poached fish or seafood.
