1 cup | 62g / 2.2oz | Diced fresh tomatoes |
1/2 cup | 31g / 1.1oz | Corn kernels - fresh or frozen |
1/2 cup | 31g / 1.1oz | Diced onion |
1 tablespoon | 15ml | Chopped jalapeño peppers |
2 tablespoons | 30ml | Lime juice |
2 | Fresh garlic cloves - finely diced | |
Tijuana Triangles | ||
Corn tortillas | ||
Green chilies | ||
Grated part-skim milk mozzarella cheese |
Combine all ingredients. Serve with low-fat baked tortilla chips, fresh veggies or Tijuana Triangles.
Tijuana Triangles: Cut corn tortillas into six triangles. Top with green chilies and a little grated part-skim milk mozzarella cheese. Place in a 350 degree oven to crisp tortillas and melt cheese. Enjoy!
