Recipe Ingredients

1 cup 198g / 7ozSugar
1/4 cup 59mlApplesauce
2   Eggs - beaten
1 teaspoon 5mlVanilla
1 teaspoon 5mlCinnamon
12 cups 1752g / 61ozChopped nuts - (optional)
1/2 cup 118mlVegetable oil
2   Carrot baby
1 1/4 cups 78g / 2.8ozFlour
1 teaspoon 5mlBaking soda
1/2 teaspoon 2.5mlSalt
  Icing
1/4 cup 49g / 1.7ozSoft margarine
1 1/2 cups 297g / 10ozPowdered sugar
3 oz 85gLight cream cheese
1 teaspoon 5mlVanilla

Recipe Instructions

Preheat oven to 350 degrees. In a large bowl, mix all carrot bar ingredients and nuts together. Bake in 9- by 13-inch lightly greased and floured pan for 25 to 30 minutes.

While bars bake, mix Icing ingredients. When bars are baked, cool, spread with icing or sprinkle with powdered sugar. Cut into bars. Share with friends.
