4 cups | 948ml | Chicken broth |
4 cups | 948ml | Shredded potatoes |
1/4 cup | 15g / 0.5oz | Minced onion |
1/4 cup | 27g / 1oz | Shredded carrots |
1 | Bay leaf | |
1/2 teaspoon | 2.5ml | Seasoned salt |
1/4 teaspoon | 1.3ml | Freshly-ground white pepper |
1 | Cream cheese - (8 oz) - cut into chunks |
Combine broth, potatoes, onion, carrots, bay leaf, seasoned salt and pepper. Bring to a boil, then reduce heat and simmer 10 to 15 minutes.
Remove bay leaf. Reduce heat to low. Stir in cream cheese. Heat, stirring frequently, until cheese melts.
This recipe yields about 8 (1-cup) servings.
