Brown Derby's French Onion Soup Recipe - Cooking Index
This is a wonderful soup to make. It is simplistic, and a perfect comfort food. We have also tried cooking this soup on low in a crockpot and have had excellent results.
Courses: Soup1/4 lb | 113g / 4oz | Butter |
1 1/2 lbs | 681g / 24oz | White onions - thinly slices |
1 | Canned beef stock | |
1 | Canned chicken broth | |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Celery salt |
1/4 teaspoon | 1.3ml | Salt |
1 | Bay leaf | |
1 tablespoon | 15ml | Worcestershire sauce |
Slice onions thinly and saute lightly in butter, until the onions become clear. Mix all ingredients together and simmer until onion is tender but not too soft, this can take about 30 minutes or so.
Ladle into bowls and sprinkle with Parmesan cheese and garlic croutons.
This recipe yields 8 to 12 servings.
