Black Eyed Pea's Cornbread Recipe - Cooking Index
No one does Cornbread quite like the Black Eyed Pea Restaurant. This recipe originally appeared in the Fort Worth Star Telegram.

1 cup | 237ml | Canned black-eyed peas - drained |
1 cup | 62g / 2.2oz | Onion - chopped |
3/4 cup | 177ml | Cream-style corn |
1 cup | 62g / 2.2oz | Cornmeal |
1/2 cup | 31g / 1.1oz | Flour |
1 cup | 237ml | Buttermilk |
1/4 cup | 59ml | Cooking oil |
2 | Eggs - slightly beaten | |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Baking soda |
2 | Jalapeño peppers - chopped | |
1 cup | 146g / 5.1oz | Grated Cheddar cheese |
Preheat oven to 350 degrees.
Brown meat and drain well. Break into small pieces. Add other ingredients in order given. Mix well.
Place in 13- by 9- by 2-inch pan that has been well greased. Cook at 350 degrees for 45 minutes, or until done.
This recipe yields 10 servings.
