Anderson's Split Pea Soup Recipe - Cooking Index
8 cups | 1896ml | Water |
2 cups | 474ml | Green split peas |
1 | Celery rib - coarsely chopped | |
1 | Carrot - chopped (large) | |
1 | Onion - chopped (small) | |
1/4 teaspoon | 1.3ml | Thyme |
1 | Red pepper | |
1 | Bay leaf | |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Combine water, peas, celery, carrot, onion, thyme, red pepper and bay leaf in large kettle. Season to taste with salt and pepper. Boil vigorously 20 minutes, then reduce heat, cover, and simmer until split peas are tender.
Press soup through fine sieve and reheat just to boiling point.
