Zucchini Relish Recipe - Cooking Index
| 2 cups | 474ml | Zucchini - shredded |
| 1/4 cup | 4g / 0.1oz | Fresh cilantro - snipped |
| 2 tablespoons | 30ml | Lime juice |
| 2 tablespoons | 30ml | Vegetable or olive oil |
| 1 teaspoon | 5ml | Salt |
| 1/4 teaspoon | 1.3ml | Sugar |
| 1/4 teaspoon | 1.3ml | Pepper |
Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 1 hour. Makes about 1 1/4 cups relish.
