Eggplant Caviar Recipe - Cooking Index
1 | Eggplant | |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
2 tablespoons | 30ml | Olive oil |
2 tablespoons | 30ml | Lemon juice |
2 tablespoons | 30ml | Finely chopped scallion |
2 tablespoons | 30ml | Finely chopped parsley |
1 | Garlic clove - finely chopped |
Bake eggplant whole and unpeeled for 1 hour at 450F. Peel. Place eggplant in a bowl.
Chop or mash. Add all remaining ingredients. Mix well. Chill.
