Chicken With Wine - (Coq Au Vin)

Recipe Ingredients

3 lbs 1362g / 48ozBroiler chicken - quartered
2 tablespoons 30mlOil
1 tablespoon 15mlChopped onion
1 tablespoon 15mlFlour
1/2 cup 118mlRed wine
1/2 cup 118mlClear chicken broth
1   Garlic clove - crushed
1   Bay leaf
1/4 teaspoon 1.3mlThyme
12 teaspoons 60mlWhite onions (small)
1 cup 237mlSliced mushrooms
4   French bread - fried in butter

Recipe Instructions

In a large, heavy skillet, cook chicken and chopped onion in heated oil until slightly browned. Stir in flour and cook until well browned.

Add wine, chicken broth, garlic, bay leaf, thyme, white onions, and mushrooms. Bring to boil. Cover. Simmer for 45 minutes, or until meat is tender.

Garnish with slices of fried bread.

Serve with boiled potatoes.
