Turkey Mole Recipe - Cooking Index

1/2 cup | 31g / 1.1oz | Chopped onion |
1/2 oz | 14g | Unsweetened chocolate - melted |
1/4 cup | 36g / 1.3oz | Diced green chilies |
1/4 cup | 15g / 0.5oz | Cornmeal |
1 tablespoon | 15ml | Peanut butter |
1 teaspoon | 5ml | Chopped cilantro |
1/2 teaspoon | 2.5ml | Crushed red pepper flakes |
1/4 teaspoon | 1.3ml | Ground cinnamon |
1/8 teaspoon | 0.6ml | Ground cloves |
1 | Garlic | |
Salt to taste | ||
1/2 cup | 80g / 2.8oz | Raisins |
Poach turkey in water for 1 1/2 hours; drain and reserve 2 cups liquid. Blend remaining ingredients, except raisins, in blender for 30 seconds. Pour sauce over turkey; stir in raisins, cover and simmer for 20 minutes.
Makes 4 to 6 servings.
Serve with Mexican rice and refried beans.
