Pimiento Cheese - Wilma's Recipe - Cooking Index
| 4 oz | 113g | Pimientos - chopped |
| 1 cup | 237ml | Nonfat mayonnaise |
| 1 tablespoon | 15ml | Fresh lemon juice |
| 1 teaspoon | 5ml | Dry mustard - hot (spice island) |
| 1/2 teaspoon | 2.5ml | Cayenne pepper |
| 1/2 teaspoon | 2.5ml | Worcestershire sauce |
| 2 | Garlic - minced | |
| 8 oz | 227g | Colby cheese - grated |
| 8 oz | 227g | Cheddar cheese - grated |
Mix well with a rotary beater, adding cheese last.
Continue beating until smooth.
Store in tightly sealed container.
Makes 4 cups.
