Mashed Bean Dip Recipe - Cooking Index
2 cups | 320g / 11oz | Drained - cooked pinto beans |
2 | Green onions - minced | |
3/4 cup | 177ml | Jack or cheddar - grated |
1/4 teaspoon | 1.3ml | Cilantro - minced |
1 tablespoon | 15ml | Chili powder |
1/2 teaspoon | 2.5ml | Salt |
1 | Garlic - crushed | |
2 tablespoons | 30ml | Bacon drippings |
Mash beans, add the other ingredients. except the fat, and mix well, seasoning with salt and garlic to taste.
Heat fat in chafing dish, add the mixture and stir until cheese is melted and the dip is bubbling. Serve warm with freshly made tostadas.
Yield: approx. 2 cups
