1 1/2 cups | 355ml | To 2 c fresh blueberries |
1 cup | 110g / 3.9oz | Sliced celery |
1 cup | 237ml | Seedless green grapes - halved |
1/2 cup | 46g / 1.6oz | Sliced almonds |
3 | Cantaloupes - halved seeded | |
Dressing | ||
1/2 cup | 118ml | Mayonnaise |
1/4 cup | 59ml | Sour cream |
1 tablespoon | 15ml | Fresh lemon juice |
1 1/2 teaspoons | 7.5ml | Grated lemon peel |
1 1/2 teaspoons | 7.5ml | Sugar - =or=- |
1 1/2 teaspoons | 7.5ml | Sugar substitute |
1/2 teaspoon | 2.5ml | Ground ginger |
1/4 teaspoon | 1.3ml | Salt - (optional) |
In a large bowl, combine chicken, blueberries, celery, grapes and almonds. In a small bowl, mix dressing ingredients. Pour over the chicken mixture and toss gently. Spoon into cantaloupe halves. Serves 6.
