Nine Bean Soup

Recipe Ingredients

1   Nine beans
2   Water
1 lb 454g / 16ozHam or big ham hock
1 lb 454g / 16ozOnion - chopped (large)
1   Garlic - minced
2 teaspoons 10mlSalt or to taste
1/2 teaspoon 2.5mlPepper
1   Bay leaf
1/2 teaspoon 2.5mlOregano
1   Vegetable cocktail juice - (12 oz.)
1/2 teaspoon 2.5mlBasil
1/2 cup 73g / 2.6ozParsley - chopped
1   Tomatoes with liquid - (16 oz.)

Recipe Instructions

Wash bean mix. Cover with water and let soak overnight. (If you forget to soak beans overnight, cover beans with water, bring to boil and boil 2 minutes.

Remove from heat, cover and let stand 1 hour.) Drain beans. Add 2 quarts cold water and ham. Bring to a boil; simmer covered 2 1/2 to 3 hours. Stir in remaining ingredients; simmer 30 minutes, stirring occasionally.
