Long John Silver's Batter Dipped Fish Recipe - Cooking Index
3 cups | 711ml | Soybean oil |
2 lbs | 908g / 32oz | Fresh cod fillets |
1 1/3 cups | 83g / 2.9oz | Self-rising flour |
1 cup | 237ml | Water |
1 | Egg | |
2 teaspoons | 10ml | Granulated sugar |
2 teaspoons | 10ml | Salt |
Heat oil to 400. Cut the fish into approximately 7x2" wedges. With a mixer blend the flour, water, egg, sugar, and salt. Dip each fillet into the batter coating generously and quickly drop in the oil.
Fry each fillet until dark golden brown about 5 minutes. Remove and drain. Soybean oil is the secret here.
You might also want to try canola oil it is the oil lowest in saturated fat and the taste difference is only slight
