Cornmeal Mix Recipe - Cooking Index
4 cups | 250g / 8.8oz | Unbleached all-purpose flour |
3/4 cup | 148g / 5.2oz | Sugar |
1 cup | 198g / 7oz | Vegetable shortening |
1 tablespoon | 15ml | Salt |
1/4 cup | 59ml | Baking powder |
4 1/2 cups | 281g / 9.9oz | Cornmeal |
In a large bowl, combine flour, salt, sugar and baking powder. Stir to blend well. With a pastry blender, cut in shortening until evenly distributed.
Add cornmeal and mix well. Put in a large airtight container. Label as CORNMEAL MIX an store in a cool, dry, place.
Use within 12 weeks. Makes about 10 1/2 cups of CORNMEAL MIX.
