Corn Bread Mix (Basic) Recipe - Cooking Index
4 cups | 250g / 8.8oz | All-purpose flour* |
4 cups | 250g / 8.8oz | Yellow cornmeal |
1 3/4 cups | 414ml | Nonfat dry milk |
1/3 cup | 78ml | Baking powder |
2 teaspoons | 10ml | Salt |
1 3/4 cups | 346g / 12oz | Shortening |
Mix flour, cornmeal, dry milk, baking powder and salt. Cut in shortening completely. Refrigerate in airtight container up to I month. 12 cups mix. *lf using self-rising flour, reduce baking powder to 2 tablespoons plus 1 1/2 teaspoons and omit salt. Use stone ground cornmeal if possible.
