Almost Marie Callendar's Potato Cheese Soup Recipe - Cooking Index
8 cups | 1896ml | Potatoes - peeled and cubed |
2 cups | 125g / 4.4oz | Chopped onion |
4 cups | 440g / 15oz | Chopped celery |
2 teaspoons | 10ml | Salt |
4 cups | 948ml | Water |
4 cups | 948ml | Half-and-half |
6 tablespoons | 90ml | Butter or margarine |
1 cup | 146g / 5.1oz | Shredded sharp cheddar cheese |
Place potatoes, onions, celery, and salt in the 4 cups of water in a large pot. Simmer about 15 minutes until vegetables are tender. Put in blender and puree until chunky.
Return soup to pot and add half-and-half, butter, and cheese. Simmer until hot. DO NOT Boil.
