Szechwan Sesame Flavored Noodles Recipe - Cooking Index
1/2 lb | 227g / 8oz | Ramen type noodles |
2 tablespoons | 30ml | Vegetable oil |
2 | Green onions - finely chopped | |
2 tablespoons | 30ml | Peanut butter |
1 tablespoon | 15ml | Sesame oil - Szechwan pepper oil* |
* (for the hearty use up to 1 tablespoon otherwise, use just a few drops.
Boil noodles al dente drain and rinse in cold water. Heat a fry pan with the oil; add noodles and flatten out like a pancake.
When the bottom becomes brown and slightly crisp, turn and fry the other side Remove from pan and let cool. Place on a platter with side and sprinkle with the chopped green onions.
In small bowl add the sesame and hot oils to the peanut- butter a few drops at a time. Just before serving pour the peanut butter sauce over the noodles.
