Crabs With Ginger & Green Onions

Recipe Ingredients

4 tablespoons 60mlPeanut oil
2 lbs 908g / 32ozLive - unshelled, crab
  (cleaned)
2 tablespoons 30mlMinced garlic
1 teaspoon 5mlMinced fresh ginger root
4 tablespoons 60mlCoarsely chopped scallions
2 tablespoons 30mlChinese rice wine - =or=- dry sherry
2 tablespoons 30mlLight soy sauce
1/2 teaspoon 2.5mlDark soy sauce
1   Salt
1/4 cup 59mlChicken broth

Recipe Instructions

HEAT A WOK OVER A HIGH FLAME.

Add the oil, and when it is hot, stir-fry the crab quickly until they turn red.

Add the remaining ingredients. Continue stirring until the crab are cooked (about 3 minutes).
