Southwestern Meat Loaf And Baked Potatoes

Recipe Ingredients

1 lb 454g / 16ozGround round
1 cup 62g / 2.2ozFrozen whole kernel corn
1/2 cup 118mlPicante sauce
1/3 cup 20g / 0.7ozRegular oats
1/4 cup 4g / 0.1ozFresh cilantro
1 tablespoon 15mlChile powder
1 1/2 teaspoons 7.5mlGround cumin
1 teaspoon 5mlEgg white (large)
  Cooking spray
1/4 cup 59mlKetchup
4 cups 948mlBaking potatoes (medium)
1/2 cup 118mlFat-free sour cream
  Freeze-dried chives - optional

Recipe Instructions

Preheat oven to 375. Combine first 8 ingredients in a large bowl, stir well. Shape meat mixture into a 9x4-inch loaf on a broiler pan coated with cooking spray. Brush ketchup over meat loaf. Arrange potatoes around meat loaf on broiler pan.

Bake at 375F for 50 minutes. Let meat loaf stand 10 minutes before slicing. Split potatoes in half lengthwise, top with sour cream. Sprinkle with chives, if desired.
