1 cup | 62g / 2.2oz | Frozen whole kernel corn |
1/2 cup | 118ml | Picante sauce |
1/3 cup | 20g / 0.7oz | Regular oats |
1/4 cup | 4g / 0.1oz | Fresh cilantro |
1 tablespoon | 15ml | Chile powder |
1 1/2 teaspoons | 7.5ml | Ground cumin |
1 teaspoon | 5ml | Egg white (large) |
Cooking spray | ||
1/4 cup | 59ml | Ketchup |
4 cups | 948ml | Baking potatoes (medium) |
1/2 cup | 118ml | Fat-free sour cream |
Freeze-dried chives - optional |
Preheat oven to 375. Combine first 8 ingredients in a large bowl, stir well. Shape meat mixture into a 9x4-inch loaf on a broiler pan coated with cooking spray. Brush ketchup over meat loaf. Arrange potatoes around meat loaf on broiler pan.
Bake at 375F for 50 minutes. Let meat loaf stand 10 minutes before slicing. Split potatoes in half lengthwise, top with sour cream. Sprinkle with chives, if desired.
