Southwest White Chili Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
1 1/2 lbs | 681g / 24oz | Boneless - skinless chicken breast, cut into cubes |
1/4 cup | 15g / 0.5oz | Chopped onion |
1 cup | 237ml | Chicken broth |
1 | Green chile - (4oz), chopped | |
1 | White kidney beans - (19oz), undrained | |
2 | Green onions - sliced | |
Southwest Spice Blend | ||
1 teaspoon | 5ml | Garlic powder |
1 teaspoon | 5ml | Ground cumin |
1/2 teaspoon | 2.5ml | Oregano |
1/2 teaspoon | 2.5ml | Cilantro |
1/8 teaspoon | 0.6ml | Ground red pepper |
1. Heat oil in large saucepan over medium-high heat. Add chicken and onions, cook 4-5 minutes.
2. Stir in broth, green chiles and spice blend, simmer 15 minutes.
3. Stir in beans. Simmer 5 minutes. Top with onions. Garnish with Monterey Jack cheese, if desired.
Makes 4 cups.
