2 cups | 125g / 4.4oz | Beef suet |
4 lbs | 1816g / 64oz | Coarsely ground beef |
3 | Garlic - crushed | |
1 1/2 tablespoons | 22ml | Paprika |
3 teaspoons | 15ml | Gebhardt's chile powder |
1 teaspoon | 5ml | Cumin seeds - |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | White pepper - ground |
1 1/2 teaspoons | 7.5ml | Dried sweet red chile pods - ground |
3 cups | 711ml | Water |
8 oz | 227g | Canned beef broth |
4 oz | 113g | Canned tomato paste |
Masa harina |
Melt the suet in a large, heavy skillet or kettle. Add the ground beef, chopped garlic and seasonings. Cover. Cook over very low heat, stirring occasionally, for 4 hours.
Add the water, broth and tomato paste. Continue cooking until the stew thickens slightly (about 1 hour). Add masa harina as needed to thicken the chili as desired.
