Mike's Texas Chili - Southern

Recipe Ingredients

3 lbs 1362g / 48ozGround beef
1 lb 454g / 16ozGround pork
1/2 tablespoon 7.5mlBacon fat or
5   Precooked strips of bacon
  Crushed
1/8 cup 24g / 0.8ozSugar
1/8 cup 20g / 0.7ozDark brown sugar
1 tablespoon 15mlBeef soup base
1/2 teaspoon 2.5mlInstant coffee or
1/2 cup 118ml- real coffee
1 cup 110g / 3.9ozChopped celery
1 teaspoon 5mlThyme
2 teaspoons 10mlSalt
1 teaspoon 5mlCumin seed
1 teaspoon 5mlGarlic - powder or minced
1 tablespoon 15mlCocoa
2   Bay leaves
1 teaspoon 5mlCilantro
1/2 tablespoon 7.5mlMexican oregano
1 teaspoon 5mlTabasco or
1 teaspoon 5mlCayenne pepper - (+/-to taste)
3/8 cup 88mlChili blend
2 tablespoons 30mlPaprika
1   V-8 juice - (48 oz. Ea)
1 cup 62g / 2.2ozChopped onion
1/2 cup 118mlGreen and red peppers
  Chopped
1   Stewed tomatoes - (16 oz. Ea)

Recipe Instructions

Brown pork and beef, and drain very well. Add all ingredients to large crock pot and cover. Cook on high for 4 - 6 hours or low for 8 - 12 hours. The longer it cooks, the thicker it gets. Cubed roast or steak may be substitiuted for the ground meat.

NOTE: This can be cooked on top of the stove.

Brown pork and beef, then cook onions until they become limp. Add all of the other ingredients first. Cook and mix for 5 minutes add meat last Cover and cook on low for at least 4 hours.

Stir every 10 to 15 minutes. Last served on 6/19/93. Today I'm making this to take to Sarah's 4th of July party. 7/02/93
