1/4 cup | 49g / 1.7oz | Butter |
2 lbs | 908g / 32oz | Boneless round steak - cubed |
5 | Zucchini - sliced thin | |
3 cups | 187g / 6.6oz | Corn |
1 | Green chiles - chopped | |
2 | Garlic - minced | |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Oregano |
1/4 teaspoon | 1.3ml | Cumin |
1 cup | 146g / 5.1oz | Cheddar cheese - shredded |
1/4 cup | 4g / 0.1oz | Chopped cilantro |
In a large skillet, melt butter. Brown meat, a few pieces at a time. Remove from skillet as they brown. Saute zucchini in skillet 7-10 minutes. Return meat and add corn, chiles, garlic, salt, oregano and cumin. Simmer, stirring occasionally, about 12-15 minutes or until meat is tender. Stir in cheese until melted. Garnish with chopped cilantro and serve.
